Breakfast at Mariposa Ranch

"Be prepared for breakfast!"Breakfast is a sit-down affair at Mariposa Ranch (unless, of course, you opt for breakfast in bed). Specials include such treats as Texas Ranger Baked Eggs, Brazos Baked French Toast, Hill Country Baked Apples with Lemon Cream Sauce and Divine Pears with Raspberry Sauce. Guests sit at elegantly laid tables and share antiquing tips, festival and concert information and sightseeing agendas. After many requests from our guests, we will soon be offering our cookbook with the most requested recipes over the last ten years.

SAMPLE BREAKFAST MENU

Recipes

TEXAS RANGER BAKED EGGS

Serves 12

7 eggs
1 cup milk
2 teaspoons sugar
4 ounces cream cheese, cut in small pieces
1 pound small curd cottage cheese
2 cups Monterey Jack cheese
¼ cup chopped green bell pepper
2/3 cup butter or margarine, melted
½ cup flour
1 teaspoon baking powder
dash paprika
dash ground mustard

THE NIGHT BEFORE: Beat eggs, milk, sugar together. Add remaining ingredients and mix well. Spray a 3 quart baking dish and pour mixture in. Cover and refrigerate overnight.

Bake at 350 for 50-60 minutes or until a knife comes out clean when inserted.

 

APPLE ENCHILADAS

8-12 servings

8-12 flour tortillas
1 can cinnamon apple pie filling
¾ to 1 cup powdered sugar
1 8-oz package cream cheese
1 stick butter, melted
2 Tbsp. each granulated sugar and cinnamon

Mix the softened cream cheese and powdered sugar together until smooth and no lumps are visible.

Place 2 Tbsp. cream cheese mixture and 2 Tbsp. apple pie filling on each of 8 tortillas. Roll up as you would an enchilada and place on a greased jellyroll pan or oblong cake pan.

Pour the melted butter over all. Mix the granulated sugar and cinnamon and sprinkle over the top.

Bake in preheated 350-degree oven for approximately 20 minutes.

ICING (Optional): Mix and pour over baked enchiladas:
½ stick butter
1 cup powdered sugar
1 Tbsp. milk

I serve this treat with breakfast, but its also great as a dessert, with Blue Bell Homemade Vanilla ice cream!

 

PEACH MUFFINS 

(makes 10 muffins)
(The preserves keep these moist and tender)

1 3/4 cups sifted all purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
1/2 cup peach preserves
1 egg
1 teaspoon vanilla extract
2/3 cup chopped pecans, toasted

Position rack in center of oven and preheat to 400°F. Line 10 muffin cups with muffin papers.

Sift first 5 ingredients into large bowl. Whisk sour cream, preserves, egg and vanilla to blend in medium bowl. Add sour cream mixture and pecans to dry ingredients and stir just until combined; do not over mix.

Divide batter among muffin cups. Bake until tester inserted into center of muffins comes out clean, about 20 minutes. Cool 15 minutes before serving.
